Turkey Mince 1 – Stir-Fried Turkey with Chili & Basil.
⦁ Time to prepare – 12 minutes
⦁ Cook – 10 minutes
⦁ Food for – 4 servings
200g bean vermicelli noodles
Two teaspoon oil
400glean turkey or chicken mince
2 garlic cloves, crushed
4 shallot, trimmed, sliced
2cm piece ginger, finely grated
1 small red chilli, sliced
1 bunch snake beans, cut into 8cm lengths
4 zucchini, cut into 8cm pieces
2 tablespoon soy sauces
1 tablespoon brown sugar
1/2 cup fresh basil leaves
Step 1: Place 200g bean vermicelli noodles (your choice) in a heatproof bowl, and fill it with water. Boil for 5 minutes or until tender, then drain it.
Step 2: Heat 2 teaspoon oil in a wok or a large deep frying pan. Stir-fry the mince for 2 minutes.
Step 3: Now add some garlic, shallots, ginger, and chilli. Stir-fry for again 2 minutes or until the mince is cooked. Remove and set aside.
Step 4: Heat the remaining oil or take 1 tsp. If there is not enough oil, stir-fry the beans and zucchini for 5 minutes or until the beans are tender, and the zucchini is slightly golden.
Step 5: Add the mince you set aside in beans and zucchini, and add soy sauce and brown sugar. Toss them until all ingredients combined well.
Step 6: Quickly toss them with some basil leaves and serve them on the noodles.

Turkey Mince 2 – Turkey Enchiladas
⦁ Time Prepare – 20 minutes
⦁ Cook – 30 minutes
⦁ Food For – 4 Serves
1 tbsp sunflower oil.
500g turkey mince (2% fat)
One medium onion, finely chopped
1 yellow pepper, deseeded and thinly sliced
400g chopped tomatoes
400g red kidney beans in chilli sauce
1tbsp fresh lime or lemon juice
2 heaped tbsp roughly chopped coriander, plus extra to garnish
6 regular or 8 mini flour tortillas
50g reduced-fat mature cheddar, coarsely grated
large mixed salad, to serve
Step 1: Heat oven by setting it to 200C/ 180C fan/ gas 6. Heat the oil in a large non-stick frying pan. Fry the turkey with onion and pepper for 5 minutes.
Step 2: Stir the turkey regularly, break them with a wooden spoon, and add some chopped tomatoes and kidney beans.
Step 3: Lightly grease an ovenproof dish with the remaining oil. Put 1 tortilla in the dish and top with a couple of generous spoonfuls of the turkey mixture.
Step 4: Roll up and push to one side of the dish. Repeat this with other tortillas, then spoon any remaining turkey mixture and make a roll.
Step 5: Sprinkle the tortillas with the cheese and bake all the rolls for 15 minutes. Scatter some coriander leaves over the enchiladas and serve this with a salad.

Turkey Mince 3 – Easy Turkey Burgers.
⦁ Preparation time – 15 minutes
⦁ Cook time – 20 minutes to 25 minutes
⦁ Food for – 8 burgers.
2 tbsp olive oil.
One large onion, finely chopped.
2 garlic cloves, crushed.
85g porridge oats.
450g to 1 Lb minced turkey
100g dried apricot, finely chopped.
1 large carrot, grated.
1 egg, beaten
Cucumber and other slices to serve.
Step 1: Heat 1 tbsp oil in a pan and gently fry the onion for 5 minutes until soft. Add the garlic and cook for 1 minute. Add oats and fry for 2 minutes (total 7 minutes). After that, tip down into a bowl and set aside to cool.
Step 2: Add the rest of the ingredients to that bowl and mix well with your hand. Mix them according to your time and shape them into 8 patties.
Step 3: Heat the oven to 200C/ fan 180C/ gas 6, then heat the remaining olive oil in a large, non-stick frying pan and sear the burger on each side until well coloured (for 3 to 4 minutes).
Step 4: Now, take a baking sheet and transfer all the burgers and left to cook in the oven for 10 to 15 minutes. Now, serve in roles with tangy tomato chutney.
Step 5: For tomato chutney, heat 1 tbsp olive oil in a pan and add 1 finely chopped onion. Cook it for 5 minutes until softened. Stir in 1 crushed garlic clove and cook for a minute. Add 1 tbsp sun-dried tomato paste, a 400g chopped tomatoes and a pinch of sugar. Gently cook for 20 to 25 minutes and when your chutney become think, serve it with those burgers.
